Really, though, I'd just say write a prologue chapter whenever you feel like writing a prologue chapter

Really, it's like Van and Seiza have said, whatever you're comfortable with and inspired to produce. If you have the material and inspiration to put them out regularly then that's awesome, but if it takes the pressure off to save them up for a once a year release then I'm totally happy.
